乳酸菌は、形状から①棒状の菌（桿菌）と②球状の菌（球菌）に分けられます。またその性質から、空気（酸素）のある無しに関わらず増殖できるグループ（通性嫌気性菌：乳酸桿菌、乳酸球菌）と、空気のあるところではほとんど生育できないグループ（偏性嫌気性菌：ビフィズス菌）に大別されます。
